This recipe is inspired by Lori’sBeaneaters & Bread Soupbook . In our 2nd twelvemonth , when we at long last had the kitchen on - site , we started occasionally host communal dinner party . 500 g / 1 lb 2 oz ricotta170 g / 6 oz Parmesan , grated , plus extra to serve2 orchis , gently beaten5 tablespoons fine breadcrumbs2 pinches of impertinently gratednutmegplain flour , for dusting250 g / 9 oz unsalted butterbunch of salvia , pickedsalt and pepper

( Note : Every time I make gnudi , they come out slightly differently . Until you palpate positive , I suggest cooking one ball as a tester to see how it turns out . If it ’s still wet , lend some more breadcrumbs . Ideally you desire as little flour on the outside as possible . However , if the gnudi are falling apart , add a bit more . The gnudi are also pleasant-tasting wait on with a rich ragu or some joint pumpkin vine or squash . )
